As the nights get colder, there is a need for more warm and comfy food! At least this happens to me and in our home.
We have to be able to do this also in the week nights, when the time is shorter. So, these type of cooking, were you can do one amazing and tasty meal in one pot is perfect. Quick, easy, more efficient and less pots and pans to clean afterward.
For the ones who know me you know I’m a little obsessed with pasta, and with that I’m always thinking on new ways to use it in my cooking.
Here is a new recipe, earthy, comfy and perfect for the beginning of Fall.
Here we go…
- 2 cups of mushrooms
- 2 cups of chicken breast (cut into squares, more or less)
- Pasta of your choice
- 1 medium onion finely sliced
- 1 can of chopped tomatoes
- Olive oil
- Garlic powder
- You can add also a few spoons of tomato paste
First start by caramelize the onions and the mushrooms with a good drizzle of olive oil or butter. This can take a few minutes, but it’s an important stage, because we are starting to build the flavors.
Next add the chicken, stir around and let also the chicken get some color.
It’s time to put the pasta and the chopped tomatoes.
Top everything with water. Season to your taste with salt, pepper and the garlic powder.
Bring to boil and let it cook. This part depends on you and what type of pasta you are cooking, to help, just read the pasta package, it will tell you how long you need to cook it for.
And you are done, easy as that!
How amazing and gorgeous this pasta looks?
I could eat it right now. All of it, with some mozzarella and parmesan on top!
You can use other ingredients, substitute the chicken for other type of meat, or even do an only vegetables using bell-peppers, carrots, peas, you choose.
There is another variation to this dish. You can substitute the pasta for potatoes, cut the potatoes into cubes, it will be amazing, I promise. It will be an italian style stew, don’t you think?
A new recipe, simple, that you can make on a week night, with ingredients that we have almost always in our pantry and fridge!
